I am a single mother to Ophelia the menacing toddler. Raising her as a vegetarian; still breastfeeding and baby wearing. Trying to keep it natural. Food, yoga, running, birds and usually a good old moan from me. In recovery from a long term eating disorder and trying to keep it positive.
The dinner Ophelia and I shared tonight. Organic, vegan and yummy! I made veggie burgers from quinoa, sweetcorn, peppers, butter beans, onions, garlic, ground oats and some herbs and spices. Homemade salsa on top and baked potato wedges. Ophelia wasn’t keen on the salad though. She ate about half of my wedges and about quarter of the burger. She’s such a good eater. I don’t give her much food in one go, she makes such a mess, just a couple of bits at a time!
Raspberry White Wine Glazed Donuts Making raised donuts is not as difficult as one would imagine. This is a great recipe to use up the last of a bottle of wine, or a great alternative to a piece of cake for dessert.
Shepherdess pie I made for dinner. It was really nice. I think I went a bit over board with the amount of potato though. I made it with red and green lentils, and added nutmeg to the mash. It was so good I am going to make a giant one and freeze portions for after I have had the baby.
